I’m starting out this month right… already did 2 miles yesterday and another 2 miles today. Which makes me want to set a mileage goal for this month of.. hmm.. let’s go for 30 miles! A total of 15 days of running. That’s definitely achievable!
Okay, so I didn’t run all 4 miles that I’ve done so far. Yesterday I probably ran about a mile, maybe a little less and today, well… I maybe got about a 1/4-1/2 mile. But today’s run was with the hubby and both dogs, which always makes things interesting.

Today is the 21st birthday of a girl that my hubby works with and she made sure everyone knew (who didn’t count down the days to their 21st birthday?!). I’ve met her and Jeff gets along with her really well (we’re actually getting together on Monday to celebrate her birthday and Jeff’s first day at his new job) so I decided to make her some cupcakes.
It is a well known fact that she is a coffeeholic so what better than coffee cupcakes? I adapted this recipe from a cupcake book that I have: Fun Stuff Cupcakes. The frosting is just a typical frosting recipe with coffee instead of whipping cream mixed in. I didn’t want the frosting to be overwhelmingly coffee-flavored since the cupcakes also have coffee in them.
These ended up so moist, they were absolutely delicious! Anywho, I’ll stop rambling and give you the recipe…
I’m all about easy dinners. I’ve been REALLY busy at work, which means I’ve been working from around 7:30-5 or 5:30. Our normal work hours are 8-4. Those long days mean that when I get home, I probably don’t feel like putting together a super complicated meal. Weekends? Sure, I’ll spend all day working on dinner. Weekdays? Not so much.
I got the idea for this one from my BBQ Chicken Sandwiches. Same general idea except that I mixed in the sauce after cooking the chicken, rather than cooking the chicken in the sauce. I can only take a little bit of buffalo wing sauce so it was much easier for my hubby and I to sauce our chicken separately.
