Boreas Pass

The hubby and I thoroughly enjoy doing some off-roading and since he had Sunday and Monday off for Memorial Day, we decided to go out and try one of the trails in our Colorado Backroads & 4-Wheel-Drive Trails book.  Last fall we did Georgia Pass, a trail that leads from the small town of Jefferson on Highway 285 to Breckenridge.  It was a nice little trail.  Nothing too crazy but a good trail for one of our first off-road adventures in Colorado.  This can’t really so much be said for Boreas Pass.

Couch to Survivor Mud Run: Week Four and a Half

So this one is week four and half because I unintentionally took the week off, with the exception of Monday.  If you read this post, you’ll understand why.

I had a BIG test on Friday (which I passed) so I spent my evenings studying rather than running.  Yes, I probably could have run, but Wednesday it was very rainy and then my test was Friday after work and by the time I got home, we went right out to celebrate.  Mmm… mexican food!

Saturday it was SUPER windy and Sunday, since the hubby had off, we went on some nice little off-road adventures.  (Check out my post about it here.)  Plus, with that huge fire that is burning in New Mexico, this weekend has been very smoky here and since I’d already screwed up most of the week, I figured I’d just start fresh Monday.

See, this was totally worth not going running on Sunday 🙂

How Many Initials Do You Have?

Maybe I’ll just be one of those people who has a ridiculous amount of initials after their name.  Even though I can’t quite add “Esq.” yet, I’m still a JD, I’ll always be SAS Jr. to my dad (we have [had before I got married] the same initials so he was Sr. and I was Jr.), I could go back and finish my MBA but for now, I get to add two more pretty soon: EA.  (And hopefully in October, I’ll get to add Esq. as well!)  I finally passed my last exam to become an Enrolled Agent!   Continue reading

Couch to Survivor Mud Run: Week Four

Let me just tell you, after taking a week off, you’ll feel it!  Also, if you’re one of those people who likes to step on the scale every morning, stop it.  Stop it now.  It will depress you, believe me.  Trainer friend says it’s because I’m gaining muscle and then 4-6 weeks in, I’ll start dropping weight.  Well, this is week 4 and I’m sure not seeing that drop.  But, this was not about weight loss, so I’m not too concerned, I just surpassed the weight I was hoping I never would.  You know that number we all have that we swear if we ever see it on the scale, we’ll immediately do something drastic to get back down below it.  Yeah, I’m there.  I also blame it partially on the scale.  I don’t trust them.  I find it very hard to believe that my weight can vary so much in a day or two.  Plus, have you ever tried weighing yourself, then weighing yourself immediately after?  You’ll probably get 2 different weights.  Okay, done with my rant, sorry ’bout that. Anywho…

Easy BBQ Chicken Sandwiches

I was inspired by the Pioneer Woman for this meal… BBQ Chicken Sandwiches.  I started out with the intention of doing it the way she shows here, but then I decided I could make it a bit easier and probably just as tasty.  First of all, she used a whole chicken, but I figured it would be easier to use chicken breast (plus I already had them and a whole chicken I would have to go buy).  Also, she browned the chicken on both sides before putting it in the BBQ sauce to cook.  I decided that step could probably be skipped altogether since the chicken was going to be shredded anyway.  She also added onion and garlic, another step I left out, figuring that the BBQ sauce had enough flavor on its own, and I was right.

I essentially just poached the chicken in BBQ sauce so it absorbed all that great flavor as it cooked.  This would be a great make ahead meal or something you can just set to cook while you do other things on a busy evening.  It’ll definitely be something I make a LOT in the future!

Monte Cristo

My Pinterest addiction continues.  However, my husband has become more okay with it because MAN, I have been making some DELICIOUS meals!!  Tonight’s meal was no different: monte cristos.  The actual recipe is from a Disney website and can be found here.  However, I tweaked it a little thanks to Rachael Ray making her Italian Monte Cristos on her daytime show last week.

This is a quick meal that can come together in less than 30 minutes so it’s great to have if you’re in a time-crunch.  It’s also made with ingredients you probably have around anyway.
